Date Night Dish : Carrabba’s Mussels in White Wine Sauce By Vince Gill
I know it’s only Tuesday and we usually do our Date Night Dish on Thursdays but I just scored the delicious recipe of Carrabba’s Mussels in White Wine Sauce that Country Music Star Vince Gill cooked for his wife Amy Grant so I figured I might as well share it with you. Besides, you need to watch the video and get the ingredients in advance that way you’ll be ready for your Friday’s romantic date-at-home :).
Carrabba’s Mussels in White Wine Sauce
2 oz Olive Oil
1# Cleaned Canadian Mussels
1/4 Chopped yellow Onion
6 cloves Chopped Garlic
1 oz Pernod liquor
8 Basil Leaves chopped
6 oz Lemon Butter Sauce
Juice of 1 lemon
Heat oil in Sauté pan. Add Mussels, cover and cook until shells begin toopen about 2 minutes. Remove top and add garlic and onions and toss. Cover pan again and cook for 1 minute. Remove top and add remaining ingredients.Reduce heat for 2 minutes with top off. Place in bowl and serve.

I have been looking for this recipe for some time now. I am happy that I have found this one however I would like to know just how to make the “lemon butter sauce”. It was not mentioned in this recipe so I have not made it as of this writing.
